I'm not positive about this, but it seems that it might be an extension of these phrases which used actual colors:

"Color me pink" -- in other words: I'm embarrassed, imagine me blushing
"Color me green" -- in other words: I'm envious or green with envy

More complicated emotions such as being intrigued or confused don't have colors associated with them in English. But we've adapted this phrase for other emotions anyway. :)
