You can write a sentence using only hiragana.
However, for Japanese people, a sentence written using only hiragana is the most difficult to read.
(For example: I'm Japanese. わたしは にほんじん です)
A sentence written using hiragana and kanji is easier to understand visually.
(For example: I'm Japanese. 私は 日本人 です)

There's Kanji for almost every verb and almost every い Adjective (if you know what that is). Of course, there's many many more for all kinds of things, so I suggest you just get an app or book for the most commonly used Kanji. For example, you could start with an app that has all the Kanji for JLPT N5 which is the easiest level of the Japanese language test and then work your way up to level 1 or whatever level you want to stop at. I would say the Kanji from JLPT N5 to N3 are the ones you should really know eventually if you want to speak, read and write Japanese well, but if you only study for fun, that's totally up to you of course.
So if you have a book or app or whatever method you want to use you can just start learning some Kanji and you will see when to use them in context when you know more Japanese. For example, if you know the word 'school' in Japanese
, which is 'gakkou' in Latin letters and 'がっこう' in Hiragana, you should find out relatively quickly, that it is normally written as '学校' with Kanji.
I suggest getting a dictionary (again book or app, doesn't matter) and whenever you learn a new word in Japanese, look it up and see if it has Kanji (although this might be tricky, cause dictionaries usually give all the readings, including ones that no one even really uses anymore). If you are unsure if a Kanji is still commonly used you could always just ask here :) And in the beginning there should only be some relatively simple Kanji for you to learn, so if you stumble upon a Kanji that looks crazy difficult, maybe leave that one for later.
(I'm so sorry I'm making this even longer, it's not that complicated, I promise) Some dictionaries also tell you what grade a Kanji is taught in or for what JLPT level you need it for (usually you only need to click on that Kanji for more information, but that depends). If you would like some suggestions just ask :)
