- "I love coffe, and I know my coworkers think otherwise."
I'm just trying to use "otherwise" and I'm not sure if I did it correctly. What I wanted to say is that I know my coworkers think I don't like coffee.

It’s natural and your use of otherwise is grammatically correct.
Here is another example of otherwise:
Take the car if you need it, otherwise I will use it to run errands.

"I love coffee, but my coworkers seem to think otherwise."
But is good for combining a statement and an opposing statement.
I love ~this BUT they don't think that I do.

Your use of "otherwise" is correct. However it might have been better to use "but" instead of "and", because "I love coffee" conflicts with what "my coworkers think"
