It is okay to say “Hi” to people you should be respectful to however you can also say “Hello” which sounds just a bit more polite but in the end either one is fine

Yes, but the polite way to address a teacher or professor would be, "Hello, Sir/Ma'am".
Or "Hello, Professor (Last Name)".

If I bump into a teacher or professor in passing (we’re both walking in opposite directions maybe, or maybe one of us is walking) I’ll just say “Hi Professor!” or “Good morning!” so just something to keep it short.
If I’m going to start a conversation with them, I would usually add their last name to make it a bit more formal (“Professor (Name), for this assignment ....”).
But I really don’t think they would think it’s disrespectful of you to say “hi” or anything :) I have also had a lot of professors that prefer being just called by their first name.
