British English vs American English, mostly.
In America, we mostly call them "fries" or "french fries" for the skinny fried potato things. If they are thicker potato wedges, then we sometimes call those "potato wedges" which are a little bit different (much thicker) than regular "fries".
But in Britain, they call both of those things "chips". So "fish and chips" is a common type of food in Britain, and it is fried fish and fried potato wedges/fries, often with things like vinegar and salt sprinkled over it. I think.
And because British English and American English developed some differences:
In Britain, they say chips = to mean American potato fries/wedges.
But in America, they say chips = to mean a snack food that is baked and then dried, salted, crisp and crunchy. Potato chips, tortilla chips, corn chips, etc. (But American "chips" are called "crisps" in Britain).
There's quite a few food words that mean a different type of food in British English vs American English: cookies, biscuits, crackers, crisps, chips, scones, pudding, etc etc don't always mean the same food when a British person says it vs when an American person says it. So there's a lot of articles on the internet that explain all of those in detail. Honestly, it's a common source of confusion between the two countries/cultures. We speak the same language...we just don't always use it in the same ways. lol
