1) The word 'ain't' is a colloquial contraction for am not, is not, are not, has not, and have not in the common English language vernacular.
If I ain't got you... = If I haven't got you...
2) Sometimes what we are taught in theory doesn't apply within the colloquial scope. It's not okay to say it this way if you take grammar rules into account, but it's super common in daily spoken English.
3) Yep, it's okay, but you should have said "I was taught" not "I am taught".

1) "ain't" is an informal contraction of "have not" in this situation, although it can be used to mean "am not", "is not", or "have not" as well.
i.e. If I have not got you
2) This is informal English, it is technically not okay to say it this way. You are correct that "If I don't have you" or "If I have not got you" are the correct ways to say the sentence.
3) In your first question you do not need the second "is"
i.e. Is the "ain't" part "am not" or Does the "ain't" mean "am not"
