All of these terms overlap but I’ll do my best to explain the nuances:
So all of these can generally apply to what a person’s job is.
For example, this sentence would make sense for every term except employment:
“What is your occupation?” = “What is your career?” = “What is your profession?” = “What is your vocation?”
“What is your employment?” is the only one that does not work.
The word employment doesn’t imply any sort of area of work but just the state of being employed, having a paid job:
“I am seeking employment.” (I am looking for/want a job)
“Her employment at this company will be terminated.” (She is getting fired/she will no longer be working at the company.)
Occupation/vocation/profession all refer to the field in which one is employed. However profession is often used in reference to a job that requires higher education training, often white-collar jobs, those that are higher paying or performed in an office.
“My profession is law.”
“His chosen profession is teaching.”
A vocation is generally a job that requires a set of skills not necessarily gained through formal education, it is often associated with jobs that require manual labor. However vocation can also refer to someone’s innate talent, ability or interest in a certain job field.
“His vocation is to work with the poor.”
“My vocation is plumbing.”
Occupation is the more general among these two (vocation and profession), generally referring to a job or field that someone currently has or could have.
“My occupation is medicine.”
“That occupation never interested me.”
Finally, while a career can also refer to a general field of work, it can also refer to one’s entire history in a certain field of work or even school.
“My college career lasted longer than most.”
“Her career in health has been decades long.”
“I’m thinking of switching my career.”
