I don't really like either phrasing. "I wish I could" is better for speaking about the present, and "I wish I would" kind of means that you are conflicted about your own intentions and I don't think that's what you mean. Here are some ways I would say this:
I wish to travel one day.
I hope I can travel one day.
You can also replace one day with someday. It means the same thing but I think it sounds more conversational.

in our textbook we had the grammar structure of wish and how to use them in the past present and future, but unfortunately I didn't get the difference between using could and would. is it because of the pronouns? or because of something else? hence that we are talking about the future.

I mostly used the word hope to give an alternate phrasing, and because I could keep more of the initial structure of the sentence (you can say "I hope I can" but you can't say "I wish I can")
Could and would are kind of strange words. They are used for the both the past tense and the conditional tense of can and will. So could is about ability and would is about intention.
Ex: I could do it if you allowed me.
This means: you aren't allowing me, so I can't do it.
I would do it if I wanted to do it.
This means: I don't want to do it, so I won't.
These sentences are both hypothetical situations. That means they are less definite than saying "I can do it" or "I will do it"
So if you say "I wish I could travel" this implies that you can't travel, and if you say "I wish I would" do something, it means you aren't doing it. This kind of implies something is preventing you but doesn't outright state that you can't, so it is possible you are conflicted about it.
An easier example might be to talk about someone else.
"I wish he could travel, but he doesn't have the money."
"I wish he would travel, because I think he would enjoy it, but he doesn't seem interested."
The thing about using both could and would is that they are about possibilities and potential, but they are about possibilities in the present tense. If, tomorrow, I talk about a hypothetical in the future, I can use "can" and "will" and the tenses will agree. If, right now, I am talking about hypotheticals, I could and would use "could" and "would"
(If I was speaking about a hypothetical in the past, I would have used "would have" and "could have")
