"I was thinking I should buy"
(Speaker is considering buying an item to resolve a problem)
ex. I was thinking I should buy a night lamp so that I can see my way through the house at night without turning on the lights.

"I thought I should buy"
(very similar in meaning to "I was thinking I would buy". It can carry a nuance in that speaker is recalling their thought process on the subject of buying a specific item.)
ex. When thinking about items I could buy to help see my way through the house, I thought I should buy a night lamp. But I settled on night lights instead.
"I thought I wanted to"
(Very similar in meaning to "I was thinking I would buy". and "I thought I should buy". I think it may have the most nuances. With this phrase the speaker is recalling their thought process in performing actions based on their feelings at a certain point in time. The speaker at first wanted to do something they assumed would satisfy their desires or necessities. However the speaker came to realization after much consideration that they do not genuinely need or want to perform this action. This realization can be caused by a variety of circumstances and events.
ex.1 (Career choice) I thought I wanted to be drummer. But I realized that I really liked using the synth more.
ex.2 (Shopping). I thought I wanted to buy a a night lamp to help me see at night, but I realized I could use my cell phone's flashlight instead.
There are a variety of situations and circumstances this phrase can be used with.

The first one is the most common in my opinion and the third as well, but there's a slight difference. The first one it means you haven't bought anything yet, the third one means you have. The second one isn't grammatically wrong but it's very unnatural, the last one sounds a bit vague. If I'm talking about myself, how would I not know whether I wanna buy something or not? In that case I would just say "I wanted to buy this thing"
