Wie sagt man das auf Deutsch? Ich schaffe es nicht. Ich kann es nicht erledigen.

Is this basically saying I can’t do it? Difference?

Very similar meaning, almost the same.
I would say the first one has a feeling of resignation. I tried, but I am just overwhelmed. I just can't do it.
The second one is more formal. Perhaps you can't do it, because of legal reasons, because of ethical reasons. But it also carries the same meaning as the first sentence.

I would say, that first sentence can stand alone. It is very likely that you have too much on your plate and not enough time or skills to do it. The second one asks for more explanation, it requires a second sentence why you can't do it.

Ich schaffe es nicht (ich habe einfach zu viel Arbeit).
Ich kann es nicht erledigen. Ich bin mit der Aufgabe nicht einverstanden.

Yes, "etwas (nicht) schaffen" is a slight modification of "etwas (nicht) können". It means that there is something you want or should do but won't be able to. You won't manage.

Kannst du sagen: ich spreche kein deutsch. In Deutschland könnte ich nicht schaffen.

In Deutschland könnte ich nicht schaffen = In Deutschland könnte ich nciht arbeiten.
Das ist eine zweite Bedeutung von schaffen (= to work).
To get the meaning of "to make it" "to manage it" you add "es" as an direct object:
Ich spreche kein Deutsch. Ohne Hilfe würde ich e s in Deutschland nicht schaffen (without help I wouldn't make it in Germany).
