When are we actually meant to use this symbol "/" ? I see other people say things like
"In order to gain the candies/lollies, we need to raid that jar"

In situations like you have, think of it as "or". It's giving you the choice between these options. Sometimes, you may have more than one.
For example, "Name your favorite movie/film/theare actor". In some situations, / can stand for "and/or", meaning it can be either choices, or more than one.
Other situations you'll find the slant is in breaking lines in poetry; long periods of time (15/16 Season of Baseball), for "per"- for each (3 cookies/ student),
