Of course! I would definitely leave out "will" and choose "Most woods float on water." It's straight and to the point, and more directly states what you mean. 😊

Both sentences mean the same exact thing.
It's a little hard to explain the difference to you- however if someone adds the word "will" in a sentence like this, typically it's to stress the fact that most woods WILL float.
It's kind of adding a word to some sentences, even when you don't necessarily have to.
"Most will float."
"Most float."
Both mean the same thing. One seems to stress the fact that they float, the other just simply states they float.
