I have a question about the line in the 2nd line.

Does it mean "if the suspect denied the charges, we stop investigating"???
Or "we ignore his denial"??

"We don't really do that," Bharara quipped in his CNN interview. "It's a standard principle in the world that when people are accused of things that they don't want to be accused of, they say, 'I didn't do it.'"

Well it's followed by him saying "We don't really do that", so perhaps he was not being entirely truthful/correct when he said that they usually drop it

It's closer to "if the suspect denied the charges, we stop investigating" - It's saying if they were denying it very strongly, they stopped asking about it.
