Which one do you think is correct?
I heard someone say 'There's more coming!'
In this case, more is reffering to 'more enemies'
More itself is the plural, right? As such, I believe it sould be 'There are more coming'
Am I wrong?
I really wonder why some of people say 'There's more coming' or 'There's too many'

You are correct. There are more (enemies) coming.
But "There's more coming" and "There's too many" are said a lot even if they are technically incorrect.

You are right. Native English speakers tend to say "There's more enemies." but it is grammatically correct said "There are more enemies". When you ask "Is there more rice?", you ask about rice which is singular. In this case, you would be answered "Yes, there is (there's) more."

@Bunch "more" is an adjective, so more itself is not singular or plural. Both 'there is more' and 'there are more' can be correct depending on the subject. If the subject (=more of what?) is countable we use "are". e.g. There are more apples.
If the subject is uncountable we use "is". e.g. There is more work.
