The first quote is transcribed correctly. The next two have some audio issues, due to video editing. Some of the words are cut off or distorted.

"We are protected by a society that values what we do."

The final quote starts in the middle of a sentence. The first half of the sentence is not included in the video.

"... this rhetoric meant to them, in their own words. And that's what really leads to a granular picture of what journalism looks like in the US in 2018."

The word "granular" in this context probably means "narrow" or "too focused"

@DestinyCall I've heard 'granular' a few times of late. It might be used more often in the UK... Urban dictionary defines it as 'specific as opposed to general', or 'having a high amount (degree?) of fine detail'.
